I was at a friends home this weekend eating some dinner. She had a small casserole dish with some broccoli in it. It looked different than steamed broccoli so we asked her how she prepared it. I can eat broccoli raw all day, but I like it cooked as well.

Have to use fresh broccoli. Cut the florets off and throw them into a cake or casserole pan.

Pour olive oil over it (just so when you mix it, you get a light coat of it on all of them)
Salt, pepper, whatever to taste.

Pop it into an oven at 400 degrees on the middle rack.

After 10 minutes take a look at it. Move it around with a spatula or something. At this point, keep watching it until its cooked through. Shouldn't be more than 5 more minutes depending on how long your oven was open.

If you have problems with kids eating it, sprinkle some monterey jack cheese on it and throw it back in the oven for a few minutes.

MMM MMM MMM No heavy casserole to stick broccoli in, no cream of something added, just broccoli, olive oil, and seasonings.

This works for almost all vegetables and we do it all the time. Use carrots, squash, baby potatoes, onion etc. You can also add spices like the dry Italian spices or fresh if you want. they come out so sweet and it's really good. I use a baking sheet pan with the raised sides and put a mix of vegetables. Very good!

I like to get the wok out, and cut up broccoli and mix it with a little teriyaki sauce and sesame seeds.

All of this sounds yummy!

I love brussel sprouts too. And I love using a wok with sesame seeds too. Olive oil on cooked veggies with balsamic vinegar, sprinkled with flax and sesame seeds. You can cook sesame seeds and toast them, but don't cook flax seeds--better for you if uncooked.

I use the same recipe for a mix of broccoli, zucchini, summer squash, purple onions, bell pepper, and mushrooms.

Sprinkle a some poultry seasoning and garlic salt then bake it to taste.

Yummy!
