So I go to the store the other day, and in the deli they're selling their own 'homemade' chicken salad. I peered through the top of the container, and it looked really good so I bought some. I've almost given up on any store-bought chicken salad and I have given up on trying to duplicate my Mom's; hers was just the best, ever. Even though I watched her from start to finish, I just can't seem to make it like she did.
Anywho, I get it out and those green spots I thought were chunks of celery are actually GRAPES.
What the hell?!?
Daughter is no help at all, "It's good Mom, you should try it!"
No no no no no.
Grapes do NOT belong in chicken salad. Ever.

I just don't want fruit in my chicken salad.

I got a cousin who is like a Chef, I had soon have his tuna salad as someone else's steak and he puts grapes in it as well as apples along with a bunch of other stuff....simply to die for.

Believe it or not, I found a really good Chicken Salad recipe on Weight Watchers online.
3/4 pound(s) cooked chicken breast, cut into bite-sized pieces
1/2 cup(s) celery, finely diced
1/3 cup(s) dill pickle(s), or sweet gherkins, finely diced
1/4 cup(s) reduced-calorie mayonnaise
2 tbsp reduced-fat sour cream
2 tbsp parsley, fresh, chopped
1 tsp Dijon mustard
1 tsp fresh lemon juice
1/2 tsp table salt
1/4 tsp black pepper, freshly ground

I thought the same thing...but then I tried it and it is excellent.
It's good either alone or on cracked wheat bread.

I put red grapes along with Granny Smith or Honeycrisp apples and toasted pecans or pine nuts, No celery BLEACK!! I also put Vidallas if they are in season if not its shallots. Oh and sweet pickles cut into chunks -not relish ya gotta have something to bit into :D

Does mentioning celery only cause you to make exhortations about bleach or do other cleaning products sometimes get equal emphasis?

I'm not a cook but....I do know the best chicken salad is to keep it simple.
For Mystic....I love the fat too. Best chicken salad sandwich has butter on the bread....I'm just sayin....;)

I've always thrown a couple of potato chips on the sandwich both chicken and tuna salad.
#7 does the same thing, actually she puts them on other sandwiches as well.
I don't think it is odd, the people that do that perhaps, but not the chips.

My recipe for chicken salad is very simple.
Chicken (I prefer to use the grilled chicken from the KFC or Popeye's spicy fried chicken)
a couple of boiled eggs
green onions (wouldn't be chicken salad without it)
chopped dill pickles
Mayonnaise
1 or 2 tsps. yellow mustard
salt and pepper to taste
I love it in a sandwich or stuffed into a nice, cool, ripe homegrown tomato.
I'm with you about the fruit. Fruit has no place in chicken salad.

My wife likes grapes in her chicken salad. I don't think it would taste very good with them in, but I guess I can't knock it until I've tried it. Now apples and pecans in my chicken salad, I can do that all day.

I don't mind grapes in chicken salad but I draw the line at pickle relish or sweet pickles in it. I love sweet pickles - just not IN chicken or tuna salad. Or potato salad.

This is how I make it Em
Use the food processor to annihilate the chicken. Add salt, pepper, onion (finely chopped), a little celery and the secret is............... Hellman's AND Miracle Whip. (I use a little more Hellmans than MW)
This is how my mom makes it and I never would have thought to use both mayos. It's to die for. My kids and hubby eat it all in one day just by spoon fulls.
dang......... i forgot sweet relish like I do when i make it.....lol!

RED grapes and a smattering of walnuts, YES.
OR only celery? Again, YES.
You can like more than one kind of chicken salad.
Btw, any tuna salad that doesn't have sweet pickles in it is boring. Add some celery AND red onion. Top with cracked pepper. FLAVOUR.

I'm not a cook but....I do know the best chicken salad is to keep it simple.
For Mystic....I love the fat too. Best chicken salad sandwich has butter on the bread....I'm just sayin....;)
Ummm...never thought to butter the bread first....I'll have to try that! :think:
For Ski: I have the same issue with weight but in reverse...I have to fight to keep weight on! Sad..but true. I'd rather have a bit to much then not enough...I look like a frog in pants for heaven sakes!!! :(( :)) lol

Ive seen this done lately at "gourmet" delis.
You can have your gourmet salads, give me good homemade old fashion salads.

The deli at the Fred Meyer's, which is kinda like the Kroger's up here, does a chicken gorgonzola salad with pasta, and grapes. I have that for my lunch often. They have a chicken caesar with spinach and bow tie pasta also, which we love. We're all the time trying to duplicate the recipe at home.

That's pretty much my recipe, but I like to add some chopped jalapeno and a sqirt of lemon juice myself.

Heh. I've had some good tofu stuff, but no. Not in chicken salad.
I've hunted around the 'net for some recipes, and have found quite a few that call for 1/2 and 1/2 mayo and sour cream. I suppose that gives it a bit of tanginess. I guess lol.
I'll try it, at least once.
A friend of mine is allergic to cow's milk. She told me for mashed potatoes, she uses mayo to make them creamy instead of milk. Sounded weird, but I made them that way once just to try it. It wasn't nearly as nasty as I expected it would be lol.

Nasoya "mayonaise" doesn't have dairy in it. It's vegan and is very good.

Im funny when it comes to mayo. On its own I cant stand it, I hate it.
When its incorporated in certain foods though where the taste of it is not noticeable I enjoy it.
